Instructions
1. Prepare the Scallops
Pat the scallops very dry with paper towels. Removing excess moisture is important for getting a crispy golden crust.
Season both sides with salt, black pepper, and garlic powder.
2. Sear the Scallops
Heat a large skillet over medium-high to high heat.
Add the olive oil. Once the oil is hot and shimmering, carefully place the scallops in the pan in a single layer. Do not overcrowd the skillet.
Sear for about 2–3 minutes, without moving them, until the bottom develops a deep golden-brown crust.
Flip the scallops and add 2 tablespoons butter. Cook for another 1½–2 minutes, spooning the melted butter over the scallops.
Remove the scallops from the skillet and set aside.
3. Make the Garlic Herb Sauce
Reduce the heat to medium.
Add 2 tablespoons butter to the same skillet. Add the minced garlic and sauté for about 30–60 seconds, until fragrant. Do not let the garlic burn.
Pour in the chicken or seafood broth and scrape up the browned bits from the bottom of the pan.
Simmer for about 2 minutes.
4. Add the Cream and Parmesan
Pour in the heavy cream and stir well.
Add Parmesan cheese, Italian seasoning, dried parsley, and red pepper flakes if using.
Simmer gently for 2–4 minutes, stirring frequently, until the sauce becomes creamy and slightly thickened.
Stir in the fresh lemon juice.
Taste and adjust with salt and black pepper.
5. Finish the Dish
Return the seared scallops to the skillet.
Spoon the creamy garlic herb sauce over them and gently warm for about 1 minute. Avoid overcooking the scallops.
Garnish with fresh parsley.
Serve immediately with the creamy sauce spooned generously over the scallops.
