Ingredients
- 12 oz (340 g) penne, spaghetti, or your favorite pasta
- 2 tbsp olive oil
- 4 cloves garlic, finely minced
- 2 cups cherry tomatoes, halved
- 1 can (14.5 oz / 410 g) crushed tomatoes

- ½ tsp dried oregano
- ½ tsp red pepper flakes, optional

- ½ cup freshly grated Parmesan cheese
- ¼ cup fresh basil, chopped
- ½ cup reserved pasta water
- 1 tsp sugar, optional, if the tomatoes are very acidic
Instructions
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Before draining, reserve ½ cup of pasta water. - Sauté the garlic:

Stir in about half of the Parmesan cheese. Cook for another 1–2 minutes until creamy and well combined. - Finish and serve:
Remove from heat and sprinkle with fresh basil and the remaining Parmesan. Serve immediately with extra black pepper and Parmesan if desired.
