Q/S
Q: Can I use quick-cooking barley?
A: Yes. Reduce the cooking time according to the package directions and add it later in the cooking process so it does not become mushy.
Q: Can I make this soup gluten-free?
A: Yes, but regular barley contains gluten. Replace the barley with certified gluten-free grains such as quinoa or rice.
Q: Can I make this soup vegan?
A: Yes. Use vegetable broth and skip the Parmesan.
Q: Can I use frozen vegetables?
A: Absolutely. Add frozen vegetables during the last 15–20 minutes of cooking.
Q: Can I make it in a slow cooker?
A: Yes. Add all ingredients except spinach, parsley, and lemon juice and cook on LOW for about 6–7 hours or HIGH for 3–4 hours. Add the greens near the end.
Q: How do I store leftovers?
A: Refrigerate in an airtight container for up to 4 days.
Q: Can I freeze Vegetable Barley Soup?
A: Yes. Freeze in airtight containers for up to 3 months. Barley absorbs liquid as it sits, so add a little extra broth when reheating.
Q: Why does my soup become very thick?
A: Barley continues absorbing broth after cooking. Simply add more vegetable broth or water when reheating.
Q: Can I add beans?
A: Yes. Cannellini beans, kidney beans, or chickpeas are excellent additions and make the soup even more filling.
