Ingredients:

  8. Cover partially and simmer for about 40–45 minutes, stirring occasionally, until the barley is tender and the vegetables are cooked through.
  9. Add the spinach or kale during the last 5 minutes of cooking. Stir until wilted.
  10. Remove the bay leaf.
  11. Stir in the fresh parsley and lemon juice. Taste and adjust salt and pepper as needed.
