Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp salt

Mushroom Cream Sauce

  • 8 oz (225 g) mushrooms, sliced
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • ½ cup chicken broth
  • ½ cup heavy whipping cream
  • ½ cup dry Marsala wine
  • 2 tbsp all-purpose flour
  • ½ tsp dried thyme
  • ½ tsp Italian seasoning
  • ¼ tsp black pepper
  • Salt to taste
  • 2 tbsp fresh parsley, chopped

 Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides with paprika, garlic powder, onion powder, thyme, Italian seasoning, salt, and pepper.
  3. Add sliced mushrooms and chopped onion to the bottom of the slow cooker.
  4. Place the seasoned chicken breasts on top.
  5. Add minced garlic and small pieces of butter over the chicken and mushrooms.
  6. Pour in the chicken broth and Marsala wine.
  7. Cover and cook on LOW for 4–6 hours or until the chicken reaches 165°F (74°C) internally.
  8. Remove the chicken and keep it covered.
  9. Stir the heavy cream into the mushroom mixture.
  10. Whisk the flour with a few tablespoons of cold water or broth to make a smooth slurry.
  11. Stir the slurry into the sauce.
  12. Cook on HIGH for about 15–20 minutes, stirring occasionally, until the sauce thickens.
  13. Return the chicken to the slow cooker and coat it with the creamy mushroom sauce.
  14. Garnish with fresh parsley.
  15. Serve over mashed potatoes, rice, or pasta with green beans on the side.
