Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika

- 8 oz (225 g) mushrooms, sliced
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 3 tbsp butter
- ½ cup chicken broth
- ½ cup heavy whipping cream
- ½ cup dry Marsala wine
- 2 tbsp all-purpose flour
- ½ tsp dried thyme
- ½ tsp Italian seasoning
- ¼ tsp black pepper
- Salt to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Pat the chicken breasts dry with paper towels.
- Season both sides with paprika, garlic powder, onion powder, thyme, Italian seasoning, salt, and pepper.
- Add sliced mushrooms and chopped onion to the bottom of the slow cooker.
- Place the seasoned chicken breasts on top.
- Add minced garlic and small pieces of butter over the chicken and mushrooms.
- Pour in the chicken broth and Marsala wine.
- Cover and cook on LOW for 4–6 hours or until the chicken reaches 165°F (74°C) internally.
- Remove the chicken and keep it covered.
- Stir the heavy cream into the mushroom mixture.
- Whisk the flour with a few tablespoons of cold water or broth to make a smooth slurry.
- Stir the slurry into the sauce.
- Cook on HIGH for about 15–20 minutes, stirring occasionally, until the sauce thickens.
- Return the chicken to the slow cooker and coat it with the creamy mushroom sauce.
- Garnish with fresh parsley.
- Serve over mashed potatoes, rice, or pasta with green beans on the side.
