Ingredients
For the Bok Choy
- 4–5 medium bok choy
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, finely minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes, optional
For Finishing
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon toasted pine nuts or chopped walnuts, optional
Instructions
1. Prepare the Bok Choy
Preheat your oven to 425°F (220°C).
Wash the bok choy thoroughly, especially between the stems where dirt can collect.
Pat them completely dry.
For medium bok choy, cut each one in half lengthwise. If using large bok choy, cut into quarters.
2. Make the Garlic Oil
In a small bowl, combine:
- Olive oil
- Minced garlic
- Oregano
- Paprika
- Salt
- Black pepper
- Red pepper flakes, if using
Mix well.
3. Season the Bok Choy
Arrange the bok choy cut-side up on a large baking sheet.
Drizzle the garlic-herb oil over the bok choy and rub gently so the leaves and stems are evenly coated.
Turn some pieces cut-side down for better browning.
4. Roast
Place in the preheated oven and roast for approximately 12–18 minutes.
The edges should become lightly browned and caramelized while the stems become tender.
For extra browning, switch to broil for 1–2 minutes at the end, watching carefully.
5. Add Feta
Remove the roasted bok choy from the oven.
Immediately sprinkle the crumbled feta over the top.
The heat from the vegetables will soften the feta slightly without completely melting it.
6. Add Lemon and Herbs
Drizzle with fresh lemon juice and sprinkle with lemon zest.
Finish with fresh parsley and optional toasted pine nuts or walnuts.
Serve immediately while warm.
