For the salad

  • 4 medium Granny Smith apples

  • ¾ cup dried cranberries

  • ¾ cup pecan halves, roughly chopped

For the creamy dressing

  • ½ cup mayonnaise

  • ½ cup plain Greek yogurt

  • 2 tbsp honey

 Detailed Instructions

1. Prepare the apples

Wash and dry the apples thoroughly.

You can peel them, but leaving the skin on gives the salad the green color and crunchy texture seen in the photo.

Remove the cores and cut the apples into approximately 1–1.5 cm cubes.

Immediately place them in a large bowl.

Add 2 tbsp lemon juice and gently toss.

The lemon juice helps prevent the apples from turning brown while also adding a fresh, slightly tart flavor.


2. Prepare the pecans

Roughly chop the pecans into a mixture of small pieces and larger chunks.

For better flavor, you can toast them:

  1. Place the pecans in a dry skillet.

  2. Heat over medium-low heat.

  3. Toast for approximately 3–5 minutes.

  4. Stir frequently so they don’t burn.

  5. Remove from the heat and allow them to cool completely.

Don’t add hot pecans to the salad, because they can soften the apples and affect the dressing.


3. Prepare the dressing

In a separate bowl, combine:

  • ½ cup mayonnaise

  • ½ cup Greek yogurt

  • 2 tbsp honey

  • 1 tbsp lemon juice

  • ½ tsp vanilla

  • ¼ tsp salt

  • ⅛ tsp black pepper

Whisk until completely smooth and creamy.

Taste adjustment

  • Want it sweeter? Add another 1 tsp honey.

  • Want it more tangy? Add another 1 tsp lemon juice.

  • Want it lighter? Increase the Greek yogurt and reduce mayonnaise.

  • Want it creamier? Add 1–2 tbsp mayonnaise.


4. Combine the salad

Add the following to a large mixing bowl:

  • Diced apples

  • Dried cranberries

  • Toasted pecans

  • Optional celery

Pour the dressing over the mixture.

Using a large spoon or spatula, gently fold everything together.

Don’t stir aggressively, because the apple pieces can break apart.


5. Chill

Cover the bowl and refrigerate for 20–30 minutes.

This allows the flavors to blend while keeping the apples crisp.

For the freshest texture, don’t leave the salad at room temperature for an extended period.

Transfer the salad to a serving bowl.

For a presentation similar to your photo, finish with:

  • A few whole pecans

  • Extra dried cranberries

  • Freshly diced green apple

Serve chilled.
