Pork Chops
- 4 bone-in pork chops, about 6–8 oz each
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp black pepper

Creamy Mushroom Sauce
- 8 oz (225 g) mushrooms, sliced
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 can (10.5 oz/298 g) cream of mushroom soup
- 1 cup chicken broth
- ½ cup heavy cream
- 1 tbsp Worcestershire sauce
- ½ tsp Italian seasoning
- ¼ tsp black pepper
- 2 tbsp butter
- 2 tbsp chopped fresh parsley
Method
- Season the pork: Pat the pork chops dry. Season both sides with paprika, Italian seasoning, garlic powder, salt and pepper.
- Optional sear: Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until nicely browned.
- Prepare the slow cooker: Add mushrooms, onion and garlic to the bottom.
- Make the sauce: Whisk together cream of mushroom soup, chicken broth, heavy cream, Worcestershire sauce, Italian seasoning and black pepper.
- Combine: Place pork chops over the mushrooms and pour the creamy sauce over them. Add butter.
- Slow cook: Cover and cook on LOW for 4–6 hours or HIGH for 2½–3½ hours.
- Check doneness: Pork should reach 145°F (63°C) internally, followed by a 3-minute rest.
- Finish: Stir the mushroom sauce gently and garnish with fresh parsley. Serve with mashed potatoes, rice or vegetables.
