Ingredients

Pasta

  • 12 oz (340 g) rotini/fusilli pasta
  • 2 medium zucchini, sliced into half-moons
  • 2 cups cherry tomatoes, halved
  • 3–4 cloves garlic, minced
  • 3 tbsp olive oil
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes, optional
  • ½ cup reserved pasta water
  • 1 tbsp fresh lemon juice, optional

Instructions

  1. Cook the pasta: Boil salted water and cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  2. Cook zucchini: Heat olive oil in a large skillet over medium-high heat. Add zucchini and sauté for 4–5 minutes until lightly golden.
  3. Add garlic and tomatoes: Add garlic and cook for about 1 minute. Add cherry tomatoes, Italian seasoning, salt, pepper and red pepper flakes. Cook another 3–4 minutes, until the tomatoes soften and release their juices.
  4. Combine: Add cooked pasta and about ¼ cup pasta water. Toss everything together for 1–2 minutes. Add more pasta water if needed to make it glossy.
  5. Finish: Turn off the heat. Stir in Parmesan, parsley, basil and lemon juice.
  6. Serve: Toss well and serve immediately with extra Parmesan and fresh herbs.
