- 1 lb (450 g) smoked sausage or kielbasa, sliced
- 1½ lb baby potatoes, halved
- 12 oz (340 g) fresh green beans, trimmed
- 1 small onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp black pepper
- ½–1 tsp salt, to taste
- ½ cup chicken or beef broth
- 1 tbsp butter
- ½ tsp red pepper flakes, optional
- Fresh parsley, for garnish
Instructions
- Prepare potatoes: Cut baby potatoes into halves or quarters. Boil in salted water for 7–10 minutes, until partially tender. Drain.
- Brown sausage: Heat 1 tbsp oil in a large Dutch oven or deep skillet. Add sliced sausage and cook for 4–5 minutes, turning until browned. Remove and set aside.
- Cook vegetables: Add remaining oil, onion, and green beans. Cook for 4–5 minutes. Add garlic and cook for another 30 seconds.
- Add potatoes: Stir in the potatoes, paprika, garlic powder, Italian seasoning, smoked paprika, salt, pepper, and red pepper flakes.
- Combine: Return the sausage to the pot. Add broth and butter, cover, and cook over medium-low heat for 10–15 minutes, stirring occasionally.
- Finish: Cook uncovered for another 3–5 minutes so the liquid reduces and coats everything in a savory glaze.
- Serve: Garnish with fresh parsley and serve hot.
