A moist, warmly spiced carrot cake packed with freshly grated carrots and nuts, baked in a classic Bundt pan and finished with powdered sugar.

For the Cake

  • 2 cups (250 g) all-purpose flour
  • 2 cups finely grated carrots

 Instructions

1. Prepare the Bundt Pan

Preheat the oven to 350°F (175°C).

Generously grease a 10–12 cup Bundt pan, making sure to coat all the grooves. Lightly dust with flour and tap out the excess.

2. Prepare the Carrots

Peel and finely grate the carrots.

If they are extremely wet, gently squeeze out a little excess moisture—but don’t dry them completely. The natural moisture helps keep the cake tender.

3. Mix the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon
  • Nutmeg
  • Ginger

Set aside.

4. Mix the Wet Ingredients

In a large bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla until smooth and well combined.

5. Combine

Gradually add the dry ingredients to the wet mixture.
