Instructions

  1. Make the dough: In a large bowl, mix flour, yeast, salt, garlic, and chopped rosemary.
  2. Add liquids: Stir in warm water, olive oil, and honey. Mix until a sticky, shaggy dough forms. No kneading is needed.
  3. Let it rise: Cover tightly and leave at room temperature for 8–18 hours, until doubled, bubbly, and airy.
  4. Shape: Turn the dough onto a lightly floured surface. Gently fold the edges toward the center and shape into a round loaf. Place on parchment paper.
  5. Preheat: Put a covered Dutch oven in the oven and heat to 450°F (232°C) for about 30 minutes.
  6. Bake covered: Carefully transfer the dough with parchment into the hot Dutch oven. Cover and bake for 25–30 minutes.
  7. Brown the crust: Remove the lid and bake another 10–15 minutes, until deeply golden and crisp.
  8. Finish: Brush lightly with melted butter or olive oil and add fresh rosemary.
  9. Cool: Let the bread cool for at least 30–45 minutes before slicing so the inside sets properly.
