Potatoes

  • 3 lb (1.4 kg) Russet or Yukon Gold potatoes

 Instructions

  1. Prepare the potatoes: Wash the potatoes well and cut them into medium-sized chunks. You can leave the skin on for a rustic texture.
  2. Make the garlic mixture: Combine melted butter, olive oil, minced garlic, salt, pepper, Italian seasoning and thyme.
  3. Add potatoes: Place the potato chunks in a 4–6-quart slow cooker.
  4. Pour the garlic-butter mixture over the potatoes and toss gently until evenly coated.
  5. Make the creamy sauce: Whisk together heavy cream, cream cheese, Parmesan, garlic powder, salt and pepper.
  6. Pour the creamy mixture over the potatoes.
  7. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the potatoes are easily pierced with a fork. Similar slow-cooker potato recipes use roughly 4–5 hours on low or 2–3 hours on high.
  8. During the final 10–15 minutes, gently stir the potatoes so the creamy Parmesan sauce coats them.
  9. Sprinkle with fresh parsley, extra Parmesan and black pepper.
  10. Serve hot.
