Instructions
- Prepare the potatoes: Wash the potatoes well and cut them into medium-sized chunks. You can leave the skin on for a rustic texture.
- Make the garlic mixture: Combine melted butter, olive oil, minced garlic, salt, pepper, Italian seasoning and thyme.
- Add potatoes: Place the potato chunks in a 4–6-quart slow cooker.
- Pour the garlic-butter mixture over the potatoes and toss gently until evenly coated.
- Make the creamy sauce: Whisk together heavy cream, cream cheese, Parmesan, garlic powder, salt and pepper.
- Pour the creamy mixture over the potatoes.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the potatoes are easily pierced with a fork. Similar slow-cooker potato recipes use roughly 4–5 hours on low or 2–3 hours on high.
- During the final 10–15 minutes, gently stir the potatoes so the creamy Parmesan sauce coats them.
