Instructions
Step 1: Cook the shrimp
- Bring the water, lemon or lime halves, bay leaf, and salt to a boil in a saucepan.
- Add the raw shrimp and cook for approximately 2–4 minutes, depending on their size, until they turn pink and opaque.
- Check that the shrimp reach an internal temperature of 145°F (63°C).
- Drain immediately and transfer the shrimp to an ice-water bath briefly to stop further cooking.
- Drain well, pat dry, and refrigerate until cool.
Step 2: Make the Mexican cocktail sauce
- In a large bowl, combine the ketchup, tomato juice, lime juice, hot sauce, horseradish, and Worcestershire sauce.
- Add salt, black pepper, and optional chili powder.
- Whisk until smooth.
- Taste and adjust the lime juice for tanginess or hot sauce for extra spice.
The sauce should be tomato-rich, slightly sweet, tangy, and pleasantly spicy.
Step 3: Prepare the vegetables
- Dice the tomatoes and cucumber into small, bite-sized pieces.
- Finely chop the red onion and cilantro.
- If using jalapeño, remove the seeds for a milder flavor and chop finely.
- Dice the avocado just before assembling so it stays fresh.
Step 4: Combine everything
- Add the chilled shrimp to the cocktail sauce.
- Gently fold in the tomatoes, cucumber, red onion, cilantro, and optional jalapeño and celery.
- Add the avocado last and stir gently to avoid crushing it.
- Taste and adjust the lime juice, salt, and hot sauce as needed.
Step 5: Chill and serve
- Cover and refrigerate for 15–30 minutes to allow the flavors to blend.
- Spoon into chilled cocktail glasses, small bowls, or serving jars.
- Garnish with cilantro and lime wedges.
- Serve cold with tortilla chips or saltine crackers.
Tips for the best shrimp cocktail
- Use chilled shrimp: This keeps the cocktail refreshing and prevents the sauce from becoming watery.
- Don’t overcook: Shrimp become rubbery if cooked too long.
- Add avocado at the end: This helps preserve its texture.
- Adjust the heat: Start with a little hot sauce and add more gradually.
- Keep it cold: Refrigerate promptly and don’t leave seafood sitting at room temperature for more than 2 hours, or 1 hour in temperatures above 90°F (32°C).
Variations
- Extra spicy: Add minced jalapeño, hot sauce, and a pinch of cayenne.
- Mango shrimp cocktail: Fold in ½ cup diced ripe mango for a sweet, tropical flavor.
- Cucumber-lime version: Add extra cucumber and lime for a fresher taste.
- Creamier version: Stir in 1–2 tablespoons of mayonnaise, if desired.
Frequently asked questions
1. Can I use frozen shrimp? Yes. Thaw them safely in the refrigerator or under cold running water, then cook and chill them before assembling.
2. Can I use precooked shrimp? Yes. Use fully cooked, chilled shrimp and mix them directly into the prepared sauce.
3. Can I make it ahead of time? You can prepare the sauce and chop most vegetables a few hours ahead. For the freshest texture, add the avocado shortly before serving.
4. How long does it last in the refrigerator? Store in an airtight container at 40°F (4°C) or below and eat within 1–2 days for best quality. Discard it if it has been left unrefrigerated too long.
5. Is Mexican shrimp cocktail the same as shrimp cocktail with red dipping sauce? No. The Mexican version is usually served in a tomato-based sauce with lime juice, vegetables, cilantro, and avocado, while the classic American version often serves shrimp alongside a separate dipping sauce.
6. What can I serve with it? Tortilla chips, saltine crackers, tostadas, or a fresh green salad all work well.
