Step-by-step method
1. Prepare the vegetables
Finely chop the onion and bell pepper, grate the carrot, and mince the garlic. Lightly sauté them in oil for 3–4 minutes. Allow them to cool.
2. Make the mixture
Combine the mince, eggs, breadcrumbs, milk, cooled vegetables, herbs, spices, salt and pepper in a large bowl. Add the raisins and chopped nuts if desired. Mix until evenly combined, but do not overmix.
3. Fill the baking tin
Grease an 8-inch (20 cm) round cake tin or ovenproof dish. Line the base with baking paper. Press the mixture evenly into the tin and smooth the top.
4. Bake until golden
Preheat the oven to 180°C (350°F). Bake for approximately 50–65 minutes, depending on the depth of the mixture. Brush with ketchup and oil during the last 10–15 minutes for a glossy, browned top.
For ground beef, the centre should reach 71°C (160°F); for ground chicken, 74°C (165°F).
5. Rest and serve
Leave the loaf to rest for 10–15 minutes before removing it from the tin. Cut into wedges with a sharp knife. Garnish with fresh herbs and serve warm.
Nuts and Q/S guide

Almonds: ¼–½ cup, chopped, for a mild nutty flavour.

Walnuts: ¼ cup, chopped, for a richer taste.

Cashews: ¼ cup, chopped, for a softer crunch.

Raisins: Q/S, around 2–4 tbsp if you prefer only a little sweetness.

Mixed nuts: Up to ½ cup in total; chop them finely so the loaf slices neatly.
