Ingredients

  • 1 lb (450 g) ground beef

  • 4 medium potatoes, peeled and diced

  • 2 medium carrots, sliced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 cup corn kernels

  • 1 cup green beans, cut into pieces

  • 1 cup green peas

  • 1 can (14–15 oz / 400 g) diced tomatoes

  • 1 can (8 oz / 225 g) tomato sauce

  • 6–8 cups beef broth or water

  • 2 tbsp olive oil, if needed

  • 1 tsp salt, or to taste

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 1 bay leaf (optional)

  • 1 tsp beef bouillon (optional)

  • 1–2 tbsp chopped parsley for garnish

Full cooking instructions

1. Brown the beef

Heat a large soup pot over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it into small pieces. Drain excess fat if necessary. Add the chopped onion and garlic and cook for another 2–3 minutes.

2. Add tomatoes and broth

Stir in the diced tomatoes, tomato sauce, beef broth, salt, pepper, paprika, Italian seasoning, and optional bay leaf. Bring the mixture to a gentle boil.

3. Cook the potatoes and vegetables

Add the potatoes, carrots, and green beans. Reduce the heat, cover partially, and simmer for 20–25 minutes. Add the corn and peas and continue cooking for 10–15 minutes, until the potatoes and vegetables are tender.

4. Adjust and serve

Taste and adjust the seasoning. Add more broth or water if the soup is too thick. Remove the bay leaf, sprinkle with fresh parsley, and serve hot with crusty bread or rice.
