Ingredients
-
2½–3 lb (1.1–1.4 kg) beef stew meat, cut into cubes
-
1 packet au jus gravy mix (about 1 oz / 28 g)
-
1 packet ranch seasoning mix (about 1 oz / 28 g)
-
1 packet dry onion soup mix (about 1 oz / 28 g)
-
½ cup (115 g) unsalted butter, cut into pieces
-
1 cup beef broth or water
-
½ tsp black pepper, or to taste
-
½ tsp garlic powder (optional)
-
4–6 pepperoncini peppers (optional, for a tangy Mississippi-style flavor)
Instructions
1. Prepare the beef
Pat the beef cubes dry with paper towels. For extra flavor, brown them in a hot skillet with a little oil for 2–3 minutes per side. This step is optional.
2. Add the beef to the slow cooker
Place the beef cubes in an even layer in the slow cooker. Pour the beef broth around the meat.
3. Add the seasonings
Sprinkle the au jus mix, ranch seasoning, and onion soup mix evenly over the beef. Add black pepper and optional garlic powder. Avoid adding extra salt initially, as the seasoning packets can be salty.
4. Add the butter
Place the butter pieces over the seasoned beef. Add the optional pepperoncini peppers if you want a slightly tangy flavor.
5. Slow cook
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the beef is fork-tender. Cooking time varies with the size of the beef cubes and your slow cooker.
6. Make the gravy
Stir the beef gently in the cooking liquid. For thicker gravy, mix 1 tablespoon cornstarch with 1 tablespoon cold water, stir it into the liquid, and cook on HIGH for another 10–15 minutes.
7. Serve
Spoon the tender beef and gravy over creamy mashed potatoes, rice, or egg noodles. Serve with steamed green beans or roasted vegetables.
