Ingredients
Wet ingredients
-
3 very ripe medium bananas, mashed (about 1 cup)
-
2 large eggs, room temperature
-
½ cup (115 g) unsalted butter, melted and slightly cooled
-
¾ cup (150 g) granulated sugar
-
¼ cup (50 g) packed brown sugar
-
1 teaspoon vanilla extract
-
¼ cup (60 g) sour cream or plain Greek yogurt
Dry ingredients
-
1½ cups (190 g) all-purpose flour
-
1 teaspoon baking soda
-
½ teaspoon baking powder
-
½ teaspoon salt
-
1 teaspoon ground cinnamon (optional)
Chocolate swirl
-
½ cup (85 g) chocolate chips or chopped semi-sweet chocolate
-
2 tablespoons unsweetened cocoa powder
-
1 tablespoon milk, if needed
Optional topping
-
1 tablespoon chocolate chips
-
1 teaspoon coarse sugar
Instructions
1. Prepare the oven and pan
Preheat the oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan with butter or cooking spray, then line it with parchment paper, leaving some overhang for easy removal.
2. Mash the bananas
In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps are fine and add texture.
3. Mix the wet ingredients
Add the melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and sour cream or yogurt. Whisk until smooth and well combined.
4. Combine the dry ingredients
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon.
Add the dry mixture to the wet ingredients. Fold gently with a spatula until just combined. Avoid overmixing, which can make the loaf dense.
5. Prepare the chocolate batter
Transfer about one-third of the batter to a separate bowl. Mix in the cocoa powder and melted chocolate chips. If the chocolate batter is too thick, add 1 tablespoon of milk.
For a more distinct chocolate swirl, melt the chocolate chips in short microwave intervals, stirring between each interval, and let them cool slightly before mixing into the reserved batter.
6. Layer the batter
Spoon half of the plain banana batter into the prepared loaf pan. Add half of the chocolate batter in spoonfuls over the top. Repeat with the remaining plain and chocolate batters.
Use a butter knife or skewer to gently swirl the two batters together in a few figure-eight motions. Do not over-swirl, or the chocolate pattern may disappear.
7. Bake
Place the pan on the center rack and bake for 50–65 minutes. Begin checking around 50 minutes.
The loaf is ready when the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs but no wet batter. If the top browns too quickly, loosely cover it with foil during the final 10–15 minutes.
For food safety, the center should reach approximately 200–205°F (93–96°C) for a fully baked quick bread.
8. Cool the loaf
Let the bread rest in the pan for 10–15 minutes. Lift it out using the parchment paper and transfer it to a wire rack.
Allow it to cool for at least 30 minutes before slicing so the crumb can set and the chocolate swirl holds its shape.
9. Slice and serve
Cut into thick slices with a serrated knife. Serve plain or slightly warm, with coffee, tea, or a glass of milk.
Tips for the Best Banana Bread
-
Use very ripe bananas: Bananas with plenty of brown spots provide the best sweetness and flavor.
-
Measure flour accurately: Spoon flour into the measuring cup and level it rather than packing it down.
-
Avoid overmixing: Fold just until no dry flour remains.
-
Create a defined swirl: Use a knife to make only a few gentle passes through the batter.
-
Prevent a dry loaf: Start checking early, since oven temperatures and loaf pans vary.
-
For extra chocolate flavor: Add a few chocolate chips on top before baking.
