Ingredients
-
8 oz (225 g) bacon or turkey bacon, cooked and chopped
-
2 cans (15 oz / 425 g each) black beans, drained and rinsed
-
2 cans (15 oz / 425 g each) whole-kernel corn, drained
-
1 cup (240 g) salsa or diced tomatoes with green chilies
-
½ cup (120 ml) chicken or vegetable broth
-
1 teaspoon garlic powder
-
1 teaspoon smoked paprika
-
½ teaspoon ground cumin
-
½ teaspoon black pepper
-
Salt, to taste
-
2 tablespoons chopped fresh cilantro, optional
Optional additions
-
1 small onion, finely diced
-
1 chopped bell pepper
-
½ teaspoon chili powder for extra heat
-
½ cup shredded cheddar cheese for serving
-
Fresh lime wedges
Instructions
Step 1: Cook the bacon
Cook the bacon in a skillet until crisp and fully cooked. Transfer to a paper towel-lined plate and chop into bite-sized pieces. If using turkey bacon, follow the package instructions for cooking.
Step 2: Prepare the beans and corn
Drain and rinse the black beans thoroughly. Drain the corn. This helps remove excess liquid and keeps the dish from becoming watery.
Step 3: Add everything to the slow cooker
Place the black beans, corn, salsa, broth, garlic powder, smoked paprika, cumin, black pepper, and optional onion and bell pepper into the Crockpot.
Add about three-quarters of the cooked bacon, reserving the rest for the topping.
Step 4: Mix well
Stir gently with a wooden spoon until the ingredients and seasonings are evenly distributed.
Step 5: Slow-cook
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, stirring once halfway through if convenient. Since the beans and corn are already cooked, the goal is to heat everything thoroughly and let the flavors blend.
Step 6: Adjust the consistency
If the mixture is too thick, add a little broth. If it is too watery, remove the lid for the final 15–20 minutes and monitor it while the excess liquid evaporates.
Step 7: Finish and serve
Stir in the remaining bacon. Taste and adjust the salt and pepper. Garnish with fresh cilantro and serve warm with lime wedges or shredded cheddar cheese.
