Mediterranean Lemon Chicken with Artichokes & Olives!

This Lemon Chicken with Artichokes & Olives is bursting with fresh flavors and is perfect for a quick, healthy, and delicious dinner! 
Ingredients:

4 boneless, skinless chicken breasts
*
2 tablespoons olive oil
*
1 lemon, zest and juice
*
2 teaspoons dried oregano
*
1 teaspoon garlic powder
*
Β½ teaspoon salt
*
ΒΌ teaspoon black pepper
*
1 cup artichoke hearts, drained and chopped
*
Β½ cup Kalamata olives, pitted and sliced
*
ΒΌ cup fresh parsley, chopped
*
Β½ cup chicken broth
*
1 tablespoon capers (optional)
Instructions:
1. Prep the Chicken 
:** Season chicken breasts with lemon zest, oregano, garlic powder, salt, and pepper.
2. Sear the Chicken
:** Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4-5 minutes per side, until golden brown.
3. Add Artichokes & Olives 
:** Add artichoke hearts, Kalamata olives, and capers (if using) to the skillet. Cook for 2-3 minutes.
4. Pour Broth & Lemon Juice 
:** Pour in chicken broth and lemon juice. Bring to a simmer.
5. Simmer & Cook
:** Reduce heat, cover, and simmer for 10-12 minutes, or until chicken is cooked through and sauce has thickened slightly.
6. Garnish & Serve 
:** Stir in fresh parsley. Serve hot and enjoy!
