2 tablespoons vegetable oil (or any cooking oil)

3 cloves garlic, minced
-
1-inch piece of ginger, minced
-
1-2 green chilies, finely chopped (adjust to spice preference)
-
1 tablespoon soy sauce
-
1 tablespoon rice vinegar or lemon juice
-
1 tablespoon chili sauce or sriracha (adjust to spice preference)
-
1 teaspoon paprika or red chili powder
-
1 teaspoon cumin powder
-
1/2 teaspoon turmeric (optional for color)
-
Salt to taste
-
Fresh cilantro for garnish (optional)
-
1 tablespoon sesame seeds (optional)
Instructions:
-
Prep the cauliflower:
-
Wash and cut the cauliflower into small bite-sized florets. Set aside.
-
-
Stir-fry the cauliflower:
-
Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
-
Add the cauliflower florets and stir-fry them for 5-6 minutes until they start to turn golden and crisp on the edges. You can cover the pan to help them cook through, stirring occasionally. Once done, transfer the cauliflower to a plate and set aside.
-
-
Sauté aromatics:
-
In the same pan, add the remaining tablespoon of oil.
-
Add the sliced onion and sauté until soft and slightly caramelized, about 4 minutes.
-
Add the garlic, ginger, and green chilies, and sauté for another 1-2 minutes until fragrant.
-
-
Add the spices and sauce:
-
Stir in the paprika, cumin powder, and turmeric (if using). Mix well.
-
Add the soy sauce, rice vinegar (or lemon juice), and chili sauce or sriracha. Stir to combine.
-
-
Combine cauliflower with the sauce:
-
Return the cauliflower florets to the pan and toss to coat evenly with the sauce and spices.
-
Stir-fry for another 3-4 minutes, letting the flavors meld together. Adjust salt to taste.
-
-
Garnish and serve:
-
Once done, garnish with fresh cilantro and sesame seeds if desired.
