Ingredients

  • 4 oz (½ cup) reduced-fat cream cheese, softened

  • ¼ cup protein powder (vanilla or unflavored)

  • ¼ cup powdered sweetener or coconut sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ½ cup finely chopped pecans

  • ½ cup almond flour (or oat flour)

  • ½ teaspoon baking powder

  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix wet ingredients: In a bowl, beat cream cheese and sweetener until smooth. Add egg and vanilla; mix well.

  3. Add dry ingredients: Stir in protein powder, almond flour, baking powder, and salt until combined.

  4. Fold in pecans gently.

  5. Scoop dough onto baking sheet and flatten slightly.

  6. Bake for 12–14 minutes until edges are set and lightly golden.

  7. Cool for 10 minutes before serving (they firm up as they cool).
