🛒 Ingredients (Makes ~12–15 falafel)
- 1 cup dried chickpeas (soaked overnight, NOT canned)
- 1/2 small onion
- 3 cloves garlic
- 1/2 cup fresh parsley or cilantro
- 1 tsp cumin
- 1 tsp coriander powder
- 1/2 tsp paprika
- 1/2 tsp baking powder
- 1–2 tbsp flour (or chickpea flour)
- Salt & black pepper (to taste)
- 1–2 tbsp olive oil (for brushing or spray)

1. Soak chickpeas
- Soak dried chickpeas in water for 8–12 hours
- Drain well (very important)
2. Make mixture
- Add chickpeas, onion, garlic, and herbs to a food processor
- Pulse until coarse (not smooth paste)
- Mix in spices, flour, and baking powder
3. Shape
- Form small balls or patties
4. Chill (optional but helpful)
- Refrigerate for 20–30 minutes (helps hold shape)
5. Air fry
- Preheat to 180°C (350°F)
- Lightly spray falafel with oil
- Cook for 12–15 minutes, flipping halfway
- Until golden and crispy
