Salad

  3. Core the apples and slice them thinly. Toss with a small splash of lemon juice to help prevent browning.
  4. Add greens, apples, cranberries, walnuts, feta and parsley to a large bowl.
  5. Make the dressing: Whisk olive oil, lemon juice, honey, Dijon mustard, apple cider vinegar, salt and pepper until combined.
  6. Pour the dressing over the salad just before serving.
  7. Toss gently so the feta stays in small pieces and the greens remain crisp.
  8. Add a few extra walnuts, cranberries and feta on top and serve immediately.
