Ingredients
- 2 cups rolled oats (old-fashioned)
- 1½ cups milk — dairy, almond, oat, or soy
- 2 large eggs
- ¼ cup maple syrup or honey
- 2–3 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup chopped nuts
- Optional: 1 mashed ripe banana for extra moisture/sweetness
- Optional: ¼–½ cup raisins, dates, chopped apple, or berries
Good nut choices: walnuts, pecans, almonds, hazelnuts, or a mixture. Nuts can be added to the oats or sprinkled over the top
Method
- Heat oven to 350°F / 175°C.
- Grease an approximately 8×8-inch or 9×9-inch baking dish.
- Mix oats, cinnamon, baking powder, salt and chopped nuts.
- In another bowl whisk milk, eggs, maple syrup, melted butter and vanilla. Add mashed banana if using.
- Pour the wet mixture over the oats and stir well.
- Transfer to the baking dish and spread evenly. Sprinkle additional nuts on top.
- Bake for approximately 30–40 minutes, until the center is set and the top is golden brown
- Cool for 10–15 minutes before cutting into squares.
