For the minced meat

For the vegetables

For the cheese topping

Step-by-step cooking instructions

1. Prepare the minced meat

Heat oil in a pan. Add the chopped onion and cook for 3–4 minutes. Add garlic and cook for another 30 seconds. Add the minced beef and break it up with a spoon. Cook until browned and no longer pink.

2. Season the meat

Add chopped tomatoes, tomato paste, chilli powder, cumin, black pepper, salt, and oregano. Cook for 6–8 minutes until the tomatoes soften and the mixture thickens. Avoid making it too watery.

3. Arrange the vegetables

Preheat the oven to 200°C (392°F). Lightly grease four individual oven-safe foil trays or one medium baking dish. Arrange some peppers, onion, and tomato at the bottom.

4. Layer the casserole

Spread the cooked minced meat over the vegetables. Add the remaining peppers and tomato slices. Cover generously with mozzarella and cheddar. Finish with jalapeño slices for the appearance shown in the photo.

5. Bake until golden

Bake uncovered for 15–20 minutes, until the cheese is melted, bubbling, and lightly golden. If desired, grill or broil for 2–3 minutes at the end, watching carefully. Rest for 5 minutes before serving.

Other allergen to note: Milk

Quick serving suggestions

  • Serve with garlic bread, dinner rolls, or toasted pita.

  • Pair with a fresh cucumber and lettuce salad.

  • For a lower-carbohydrate meal, serve with steamed broccoli or roasted cauliflower.

  • For a spicier version, add green chillies or extra jalapeños.

  • For a chicken version, use minced chicken and cook it thoroughly before assembling the casserole.

Important: Use oven-safe foil trays only. If using raw minced meat directly in the casserole instead of cooking it first, increase the baking time and verify that the centre reaches a safe internal temperature: 71°C for ground beef or 74°C for ground chicken.
