Ingredients

For the beef filling

  • 1½ lb (680 g) ground beef

  • 1 small yellow onion, diced

  • 1 green bell pepper, diced

  • 1 can (15 oz) Sloppy Joe sauce

  • 1 can (10.5 oz) condensed cream of mushroom soup

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp salt, or to taste

  • 1 tbsp olive oil, if needed

For the casserole

  • 1 bag (28–32 oz) frozen tater tots

  • 2 cups shredded sharp cheddar cheese

  • ½ cup extra cheddar cheese for topping, optional

  • 2 tbsp chopped fresh parsley, optional

 Instructions

1. Preheat the oven: Set the oven to 400°F (200°C). Lightly grease a 9 × 13-inch baking dish.

2. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it into small pieces. Drain excess grease.

3. Cook the vegetables: Add the diced onion and green bell pepper. Cook for 4–5 minutes until softened. Stir in garlic powder, paprika, black pepper, and salt.

4. Make the sauce: Stir in the Sloppy Joe sauce and condensed mushroom soup. Simmer for 3–5 minutes until the beef mixture is thick and flavorful.

5. Layer the casserole: Spread the beef mixture evenly in the baking dish. Sprinkle about 1 cup of cheddar cheese over the filling.

6. Add the tater tots: Arrange the frozen tots in a single layer over the beef mixture. Sprinkle the remaining cheddar on top.

7. Bake: Bake uncovered for 30–40 minutes, until the tater tots are golden and crispy and the filling is bubbling. If the tots need more browning, bake for another 5 minutes. Similar Sloppy Joe casseroles use frozen tots and a cheesy beef layer.

8. Rest and garnish: Let the casserole stand for 5 minutes. Garnish with parsley and serve hot while the cheese is stretchy.

Can I replace cream of mushroom soup? Yes. Use condensed cream of chicken soup or a homemade creamy sauce.

Can I use ground turkey? Yes. Substitute ground turkey for beef in the same quantity.

Can I add more vegetables? Yes. Add diced carrots, corn, mushrooms, or extra bell peppers to the beef filling.

Can I use a different cheese? Yes. Monterey Jack, Colby, or a Mexican cheese blend will work.

Can I prepare it ahead? Prepare the beef filling ahead and refrigerate it. Add the frozen tots and cheese shortly before baking for a crispier topping.
