  • 6 thick slices sourdough or Italian bread

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place bread slices on a baking sheet and brush lightly with olive oil.
  3. Toast for 5–7 minutes, until the edges are golden and crisp.
  4. Remove from the oven and rub each warm toast with the cut side of garlic.
  5. Add a layer of mozzarella, followed by tomato slices.
  6. Sprinkle with salt, pepper and Italian seasoning.
  7. Return to the oven for 3–5 minutes, until the mozzarella is melted and lightly golden.
  8. Remove and top generously with fresh basil.
  9. Add Parmesan and a small drizzle of balsamic glaze if desired.
  10. Serve immediately while the bread is crisp and the cheese is warm.
