These golden-baked zucchini roll-ups are filled with creamy cheese, tomato, garlic and herbs, then baked until tender and beautifully browned.

Ingredients

  • 3 medium zucchini
  • 150 g mozzarella, shredded
  • 60 g Parmesan, grated
  • 1–2 medium tomatoes, thinly sliced
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp Italian herbs
  • 1 tbsp fresh parsley, chopped
  • ½ tsp chili flakes, optional
  • Salt & black pepper, to taste

Method

  1. Slice zucchini: Cut zucchini lengthwise into thin strips, about 3–4 mm thick.
  2. Season: Brush lightly with olive oil and season with salt, pepper, garlic and oregano.
  3. Soften: Roast or grill at 200°C/400°F for 5–7 minutes, just until flexible.
  4. Fill: Place a little mozzarella, Parmesan, tomato and parsley on each zucchini strip.
  5. Roll: Carefully roll each strip and place seam-side down in a lightly oiled baking dish.
  6. Bake: Drizzle with remaining olive oil and sprinkle with Parmesan and herbs.
  7. Bake at 200°C/400°F for 20–25 minutes, until bubbling, tender and golden.
  8. Rest for 5 minutes and garnish with fresh parsley before serving.
