Cinnamon Oat Pancake

Ingredients:

  • 1 cup rolled oats (you can blend them into oat flour for a smoother texture)
  • 1 cup milk (or a dairy-free alternative like almond milk)
  • 1 egg
  • 1 tablespoon honey or maple syrup (optional for sweetness)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions:

  1. Prepare the Oats:
    • If using rolled oats, place them in a blender or food processor and pulse until they become a fine flour. If you prefer a chunkier texture, you can leave them as they are.
  2. Mix Wet Ingredients:
    • In a bowl, whisk together the milk, egg, honey (or maple syrup), and vanilla extract.
  3. Combine Dry Ingredients:
    • In a separate bowl, mix the oat flour, baking powder, cinnamon, and salt.
  4. Combine Wet and Dry:
    • Gradually add the wet ingredients to the dry mixture and stir until combined. The batter should be slightly thick but pourable. If it’s too thick, add a little more milk to adjust the consistency.
