Cinnamon Oat Pancake
A Cinnamon Oat Pancake is a delicious and healthy variation of the traditional pancake, made by incorporating oats and cinnamon into the batter. These pancakes are full of flavor and texture, making them a nutritious breakfast option. Here’s a simple recipe to make them:
Ingredients:
- 1 cup rolled oats (you can blend them into oat flour for a smoother texture)
- 1 cup milk (or a dairy-free alternative like almond milk)
- 1 egg
- 1 tablespoon honey or maple syrup (optional for sweetness)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil for cooking
Instructions:
- Prepare the Oats:
- If using rolled oats, place them in a blender or food processor and pulse until they become a fine flour. If you prefer a chunkier texture, you can leave them as they are.
- Mix Wet Ingredients:
- In a bowl, whisk together the milk, egg, honey (or maple syrup), and vanilla extract.
- Combine Dry Ingredients:
- In a separate bowl, mix the oat flour, baking powder, cinnamon, and salt.
- Combine Wet and Dry:
- Gradually add the wet ingredients to the dry mixture and stir until combined. The batter should be slightly thick but pourable. If it’s too thick, add a little more milk to adjust the consistency.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook for 2-3 minutes on one side until small bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
- Serve:
- Serve your cinnamon oat pancakes with your favorite toppings like fresh berries, banana slices, yogurt, or a drizzle of maple syrup.
