Apple layer

  • 3–4 medium apples, peeled, cored and sliced
  • 1 tbsp butter
  • 2 tbsp brown sugar

Cake batter

  • 1½ cups (190 g) all-purpose flour

 Method

  1. Prepare apples: Peel and slice the apples. Melt butter in a skillet, add apples, brown sugar and cinnamon. Cook for 4–5 minutes until slightly softened.
  2. Make batter: Whisk eggs and sugar until smooth. Add melted butter, milk and vanilla.
  3. Add flour, baking powder and salt. Mix just until combined—don’t overmix.
  4. Assemble: Grease a 9-inch (23 cm) round cake pan. Spread the batter evenly and arrange the cooked apple slices over the top.
  5. Make cream mixture: Whisk heavy cream, egg, sugar, vanilla and flour until smooth. Pour evenly over the apples.
  6. Bake: Bake at 350°F (175°C) for approximately 40–50 minutes, until golden and the center is set.
  7. Cool: Let the cake cool for at least 20 minutes before slicing.
  8. Dust generously with powdered sugar and serve warm or chilled.
