Ingredients

For the pasta salad

  • 12 oz (340 g) medium pasta shells

  • 1 cup sweet corn, drained if canned

  • 1 medium cucumber, diced

  • 1 cup red bell pepper, diced

  • ½ small red onion, finely chopped

  • ½ cup fresh parsley, chopped

  • 1 cup cherry tomatoes, quartered

For the creamy dressing

  • ¾ cup mayonnaise

  • ½ cup sour cream or plain Greek yogurt

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard, optional

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon dried Italian seasoning

  • ½ teaspoon black pepper

  • ½ teaspoon salt, or to taste

  • 1–2 tablespoons milk, optional, to thin the dressing

Instructions

Step 1: Cook the pasta

Bring a large pot of salted water to a boil. Add the pasta shells and cook according to the package directions until tender but still slightly firm.

Drain the pasta and rinse briefly under cold running water to stop the cooking and cool it for the salad. Drain thoroughly so excess water does not dilute the dressing.

Step 2: Prepare the vegetables

While the pasta cools, wash and dice the cucumber and red bell pepper. Quarter the cherry tomatoes, finely chop the red onion, and chop the fresh parsley.

Drain canned corn thoroughly, or use cooked and cooled corn kernels.

Step 3: Make the creamy dressing

In a large bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lemon juice, and optional Dijon mustard.

Add the garlic powder, onion powder, Italian seasoning, salt, and black pepper. Whisk until the dressing is smooth and creamy.

If it is too thick, add milk one tablespoon at a time until it reaches your preferred consistency.

Step 4: Combine the ingredients

Add the cooled pasta shells, corn, cucumber, bell pepper, red onion, tomatoes, and parsley to the bowl.

Pour the dressing over the salad. Gently toss until every pasta shell and vegetable is evenly coated.

Taste and adjust the salt, pepper, or lemon juice as needed.

Step 5: Chill before serving

Cover the bowl and refrigerate for at least 30 minutes, preferably 1 hour. Chilling allows the flavors to blend and makes the salad especially refreshing.

Before serving, stir gently. If the pasta has absorbed some of the dressing, mix in a spoonful of mayonnaise, yogurt, or milk to restore its creamy texture.

Step 6: Serve and enjoy

Transfer to a serving bowl or meal-prep container. Garnish with extra chopped parsley and a little black pepper.

Serve cold alongside grilled chicken, burgers, sandwiches, roasted vegetables, or barbecue dishes.
