📝 Ingredients (Serves 4):

  • 1½ lbs baby potatoes (Yukon gold or red)

  • 1½ tablespoons olive oil

  • 2 cloves garlic, minced

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried rosemary or thyme

  • Optional toppings:

    • Grated Parmesan cheese

    • Fresh parsley or chives


👩‍🍳 Instructions:

  1. Boil potatoes:
    Place potatoes in salted water. Boil 15–18 minutes until fork-tender. Drain and let steam dry 5 minutes.

  2. Preheat oven:
    Heat to 425°F (220°C). Line baking sheet with parchment.

  3. Smash:
    Place potatoes on sheet. Use bottom of glass to gently smash each.

  4. Season:
    Drizzle oil, sprinkle garlic, salt, pepper, and herbs.

  5. Roast:
    Bake 25–30 minutes, flipping once, until crispy and golden.

  6. Finish:
    Add Parmesan in last 5 minutes if using. Garnish and serve.
