Place potatoes on sheet. Use bottom of glass to gently smash each. -
Season:
Drizzle oil, sprinkle garlic, salt, pepper, and herbs. -
Roast:
Bake 25–30 minutes, flipping once, until crispy and golden. -
Finish:
Add Parmesan in last 5 minutes if using. Garnish and serve.
