Ingredients — about 20–24 bites

Cucumber bites

  • 2 large English cucumbers
  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream or plain Greek yogurt
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp salt
  • ⅛ tsp black pepper

Optional toppings

  • Extra fresh dill
  • Chopped chives
  • A little cracked black pepper
  • Thin cherry-tomato pieces
  • Everything-bagel seasoning

Instructions

  1. Wash and dry the cucumbers thoroughly.
  2. Cut them into ½-inch thick rounds. Slightly thicker slices hold the topping better.
  3. Arrange the cucumber slices on paper towels and gently pat them dry.
  4. For a firmer appetizer, sprinkle lightly with salt and let them sit for 15–20 minutes, then pat away the moisture.
  5. In a bowl, beat the softened cream cheese until smooth.
  6. Add mayonnaise, sour cream/Greek yogurt, dill, parsley, chives, lemon juice, garlic powder, onion powder, salt and pepper.
  7. Mix until creamy and well combined.
  8. Transfer the mixture to a piping bag or zip-top bag with the corner snipped off. You can also simply spread it with a butter knife.
  9. Pipe or spoon about 1 tablespoon of the mixture onto each cucumber round.
  10. Garnish with dill, chives or a tiny piece of tomato.
  11. Refrigerate for 15–30 minutes and serve chilled.
