1 cup cauliflower florets

1 can (14–15 oz) diced tomatoes (no sugar added)

1 can (15 oz) black beans or chickpeas, rinsed (optional)

4 cups low-sodium vegetable broth

1 cup water

1 tsp ground cumin
-
1 tsp smoked paprika
-
½ tsp chili powder (adjust to taste)

½ tsp ground coriander

¼ tsp cayenne pepper (optional)

Salt & black pepper, to taste

Juice of 1 lime

¼ cup fresh cilantro, chopped

Heat oil in a large pot over medium heat.

Add onion, celery, and carrots; sauté 5–6 minutes until softened.

Stir in garlic and bell pepper; cook 1 minute until fragrant.

Add zucchini, cauliflower, diced tomatoes, beans (if using), broth, and water.

Sprinkle in cumin, paprika, chili powder, coriander, cayenne, salt, and pepper.

Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
