🛒 Ingredients

  • 1 tbsp olive oil or avocado oil

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 celery stalks, sliced

  • 2 carrots, chopped

  • 1 red bell pepper, diced

  • 1 zucchini, chopped

  • 1 cup cauliflower florets

  • 1 can (14–15 oz) diced tomatoes (no sugar added)

  • 1 can (15 oz) black beans or chickpeas, rinsed (optional)

  • 4 cups low-sodium vegetable broth

  • 1 cup water

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp chili powder (adjust to taste)

  • ½ tsp ground coriander

  • ¼ tsp cayenne pepper (optional)

  • Salt & black pepper, to taste

  • Juice of 1 lime

  • ¼ cup fresh cilantro, chopped


👩‍🍳 Instructions

  1. Heat oil in a large pot over medium heat.

  2. Add onion, celery, and carrots; sauté 5–6 minutes until softened.

  3. Stir in garlic and bell pepper; cook 1 minute until fragrant.

  4. Add zucchini, cauliflower, diced tomatoes, beans (if using), broth, and water.

  5. Sprinkle in cumin, paprika, chili powder, coriander, cayenne, salt, and pepper.

  6. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.

  7. Remove from heat; stir in lime juice and fresh cilantro.

  8. Taste and adjust seasoning.
