Easy Dumpling Soup Recipe (with WW Points)

Ingredients:

For the Soup:

  • 6 cups of low-sodium chicken broth (0 WW points)

  • 1 small onion, finely chopped (0 WW points)

  • 1 egg (2 WW points)
  • 2 tablespoons butter, melted (5 WW points)

Instructions:

  1. Make the Soup Base:
    • Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened.
    • Add the diced carrots and celery, cooking for 5 minutes until they begin to soften.
    • Pour in the low-sodium chicken broth, and add salt, pepper, and thyme (if using). Bring the soup to a simmer and cook for 10-15 minutes until the vegetables are tender.
