Easy Hot and Sour Soup
Ingredients:
6 cups chicken broth
1 cup sliced mushrooms
1 cup shredded carrots
1 cup cubed tofu
1/2 cup bamboo shoots, sliced
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon cornstarch mixed with 2 tablespoons water
1 teaspoon sesame oil
1 teaspoon grated ginger
1/2 teaspoon white pepper
2 green onions, chopped
1 egg, beaten
Directions:
In a large pot, bring the chicken broth to a boil. Add the sliced mushrooms, shredded carrots, cubed tofu, and bamboo shoots. Let it simmer for about 5 minutes until the vegetables are tender.
Stir in the soy sauce, rice vinegar, grated ginger, and white pepper. Allow the mixture to simmer for another 2 minutes.
Mix the cornstarch with water to create a slurry, then slowly add it to the soup while stirring continuously to thicken the broth.
Drizzle in the sesame oil and stir in the beaten egg, allowing it to cook in the hot soup for a few moments.
Finally, garnish with chopped green onions before serving hot.
