Easy Shrimp Cocktail Recipe

Ingredients:

  • 1 lb shrimp with shell
  • Shrimp broth
  • 1/4 cup sugar-free ketchup
  • Dash of Valentina hot sauce
  • Dash of Worcestershire sauce
  • Juice of 1 lime
  • 1/4 cup diced onion
  • 1 tomato, diced
  • 1 Serrano pepper, seeds removed if desired
  • Fresh cilantro, chopped
  • 1/4 cup tomato paste
  • 1/2 cucumber, seeds removed and diced
  • Salt, to taste
  • 1 avocado, diced

Instructions:

  1. Start by cooking the shrimp in a pot of shrimp broth until they turn pink and are cooked through. Remove the shrimp from the broth and let them cool. Once cooled, peel and devein the shrimp, leaving the tails intact for presentation.
  2. In a mixing bowl, combine the sugar-free ketchup, Valentina hot sauce, Worcestershire sauce, and the juice of one lime to create the cocktail sauce. Adjust the seasoning to taste, adding more hot sauce for heat if desired.
  3. Dice the onion, tomato, Serrano pepper (remove seeds for less spice), cucumber, and avocado. Finely chop the cilantro.
  4. In another bowl, mix the diced onion, tomato, Serrano pepper, cucumber, and cilantro with the tomato paste. Season with salt to taste, mixing well to combine.
  5. To serve, divide the cocktail sauce among individual serving glasses or bowls. Arrange the peeled and deveined shrimp around the edge of each glass or bowl, leaving space in the center for the salsa.
  6. Spoon the tomato and cucumber salsa into the center of each glass or bowl, garnishing with additional cilantro if desired.
  7. Top each WW Shrimp Cocktail with diced avocado for a creamy and satisfying finish.
  8. Serve immediately and enjoy this light and flavorful twist on a classic appetizer, perfect for anyone following the Weight Watchers program or looking for a healthier alternative.
