Ingredients
For the Chicken
- 500 g boneless, skinless chicken breasts, cut into bite-size pieces

For the Pasta
- 300 g penne, rotini, or fettuccine
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1 cup tomato sauce or crushed tomatoes
- ½ cup chicken broth
- ½ cup heavy cream
- ¾ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon dried basil
- ¼ teaspoon red pepper flakes, optional
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- ¼ cup reserved pasta water, as needed
Instructions
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve about ¼ cup of pasta water, then drain the pasta. - Season the chicken:
Toss the chicken pieces with Italian seasoning, paprika, oregano, salt, and black pepper. - Cook the chicken:
Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for about 5–7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside. - Build the tomato sauce:
In the same skillet, add the chopped onion and cook for 2–3 minutes until softened. Add the minced garlic and cook for about 30 seconds. - Add the tomatoes:
Add the cherry tomatoes and cook for 3–4 minutes until they begin to soften and release their juices. - Add tomato sauce and broth:
Stir in the tomato sauce, chicken broth, Italian seasoning, basil, red pepper flakes, salt, and black pepper. Simmer for 4–5 minutes. - Make it creamy:
Reduce the heat to low and stir in the heavy cream. Slowly add the Parmesan cheese, stirring continuously until melted and the sauce becomes smooth. - Combine everything:
Return the cooked chicken to the skillet. Add the drained pasta and toss well to coat everything in the sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency. - Finish:
Simmer everything together for 1–2 minutes so the pasta absorbs the flavors. Stir in fresh parsley. - Serve:
Serve hot with extra freshly grated Parmesan and a little fresh parsley if desired.
