Instructions

  1. Marinate the chicken: Mix olive oil, garlic, lime juice, lime zest, paprika, oregano, cumin, salt, pepper, chili flakes, and cilantro. Coat the chicken and let it sit for 15–30 minutes.
  2. Cook the rice: Rinse rice. Add rice, water/broth, olive oil or butter, and salt to a saucepan. Bring to a boil, cover, reduce heat, and simmer for 15–18 minutes. Rest covered for 5 minutes, then fluff with a fork. Stir in lime juice and cilantro.
  3. Cook the chicken: Heat a skillet over medium-high heat. Cook chicken for about 5–7 minutes per side, depending on thickness, until browned and cooked through.
  4. Check that the thickest part of the chicken reaches 165°F (74°C).
  5. Prepare avocado: Slice avocado and gently toss with lime juice and a small pinch of salt.
  6. Assemble: Place a mound of cilantro-lime rice on each plate. Layer sliced avocado on top, then add the grilled chicken.
  7. Garnish with fresh cilantro and lime slices. Spoon some of the pan juices around the rice.
