- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Season the chicken: Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat the chicken thoroughly.
- Cook: Heat a skillet or grill over medium-high heat. Cook chicken for about 6–8 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
- Rest & slice: Let the chicken rest for 5 minutes, then slice into strips.
- Make tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Chill until ready to use.
- Build the salad: Add romaine, cucumber, tomatoes, red onion, feta, dill, and parsley to a large bowl.
- Top: Arrange sliced grilled chicken over the salad and spoon plenty of tzatziki on top.
- Serve: Finish with a squeeze of fresh lemon and a drizzle of olive oil.
