  5. Toss everything well so the vegetables are evenly coated.
  6. Spread the vegetables into a single layer, leaving space between pieces.
  7. Roast for 35–45 minutes, turning the vegetables halfway through, until tender and caramelized.
  8. While they roast, mix the optional dressing ingredients in a small bowl.
  9. Remove the vegetables from the oven and transfer them to a serving platter.
  10. Scatter dried cranberries, feta, and chopped pecans over the warm vegetables.
  11. Drizzle with the maple-lemon dressing if desired.
  12. Garnish with fresh parsley and rosemary and serve warm.
