Ingredients
- 1½ cups dry brown or green lentils, rinsed
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 2 medium potatoes, peeled and cubed
- 2 celery stalks, diced
- 1 can (14–15 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 2 cups fresh spinach
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp smoked paprika
- ½ tsp black pepper
- 1 tsp salt, or to taste
- 1 bay leaf
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
- Optional: pinch of red pepper flakes
Directions
- Sauté vegetables: Heat olive oil in a large pot. Add onion, carrots and celery; cook 5–6 minutes until softened.
- Add garlic & seasoning: Stir in garlic, oregano, thyme, paprika and red pepper flakes. Cook 30–60 seconds.
- Build the soup: Add potatoes, rinsed lentils, diced tomatoes, broth, bay leaf, salt and pepper.
- Simmer: Bring to a boil, then reduce heat and cover partially. Simmer 30–35 minutes, stirring occasionally, until the lentils and potatoes are tender.
- Add spinach: Stir in spinach and cook 2–3 minutes until wilted.
- Finish: Remove the bay leaf. Add lemon juice and parsley. Taste and adjust salt, pepper and lemon.
- Serve: Ladle into bowls and serve hot with toasted crusty bread.
