With Feta, Walnuts & Cranberry-Honey Glaze

A beautiful savory-sweet layered bake made with thinly sliced sweet potatoes, butternut squash, carrots, creamy feta, herbs, crunchy walnuts, and a cranberry-honey glaze. It has caramelized edges, creamy layers, and a festive topping.

Ingredients

For the Vegetable Layers

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 1 small butternut squash, peeled, seeded, and thinly sliced
  • 2 large carrots, peeled and grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon dried rosemary

Feta Cream Layer

  • 8 oz (225 g) feta cheese, crumbled
  • ½ cup cream cheese, softened
  • ¼ cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme
  • ¼ teaspoon black pepper

Cranberry-Honey Glaze

  • ½ cup dried cranberries
  • 3 tablespoons honey
  • 2 tablespoons cranberry juice or orange juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Dijon mustard
  • Pinch of salt

Topping

  • ½ cup walnuts, roughly chopped
  • ¼ cup dried cranberries
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon honey
  • 1 tablespoon olive oil

 Instructions

1. Preheat the oven

Preheat your oven to 400°F (200°C).

Lightly grease an 8×8-inch or 9×9-inch baking dish.

For easier removal, line the bottom with parchment paper, leaving a little overhang on two sides.

2. Prepare the sweet potatoes

Peel the sweet potatoes and slice them very thinly, approximately ⅛ inch (3 mm) thick.

Thin slices are important because they need to become tender while the casserole layers bake.

3. Prepare the butternut squash

Peel and remove the seeds from the squash.

Cut it into very thin slices similar in thickness to the sweet potatoes.

4. Season the vegetables

Place the sweet potatoes, squash, and grated carrots in a large bowl.

Add:

  • Olive oil
  • Salt
  • Black pepper
  • Thyme
  • Garlic powder
  • Rosemary

Toss gently until everything is evenly coated.

 Make the Feta Filling

5. Prepare the cheese mixture

Add the feta, cream cheese, Greek yogurt, minced garlic, parsley, thyme, and black pepper to a bowl.

Mash and stir until you have a thick, creamy mixture.

It doesn’t need to be completely smooth—small pieces of feta are delicious in the finished bake.

 Make the Cranberry-Honey Glaze

6. Combine the ingredients

Place the dried cranberries, honey, cranberry or orange juice, balsamic vinegar, lemon juice, Dijon mustard, and salt in a small saucepan.

7. Simmer

Cook over medium-low heat for 5–7 minutes, stirring occasionally.

The cranberries should soften and the mixture should become slightly syrupy.

Remove from the heat and allow it to cool slightly.

 Assemble the Layers

8. First layer

Arrange a layer of sweet potato slices across the bottom of the prepared baking dish.

Slightly overlap the slices so there are no large gaps.

9. Add butternut squash

Add a layer of thinly sliced butternut squash.

10. Add carrots

Spread approximately ⅓ of the grated carrots evenly over the squash.

11. Add feta mixture

Spread a portion of the feta mixture over the vegetables.

It doesn’t have to cover every millimeter—the cheese will melt into the layers as it bakes.

12. Repeat

Continue layering:

Sweet potato → butternut squash → carrots → feta mixture

Repeat until all the ingredients are used.

Finish with a layer of sweet potato or butternut squash on top.

Bake

13. Cover and bake

Cover the dish tightly with aluminum foil.

Bake at 400°F (200°C) for 35 minutes.

14. Remove the foil

Carefully remove the foil.

Brush or drizzle a small amount of the cranberry-honey glaze over the top.

Return the dish to the oven and bake uncovered for another 20–25 minutes.

The vegetables should be completely tender and the edges should become beautifully caramelized.

15. Add walnuts

During the final 5–7 minutes, scatter the chopped walnuts over the top.

This gives them a lightly toasted flavor without allowing them to burn.

✨ Final Assembly

16. Add the cranberry glaze

Remove the casserole from the oven.

Drizzle the remaining cranberry-honey glaze over the top.

Add the remaining dried cranberries.

17. Garnish

Finish with:

  • Fresh parsley
  • A few extra walnuts
  • A small drizzle of honey
  • Fresh thyme

18. Rest before cutting

Allow the casserole to rest for 10–15 minutes before slicing.

This is important because it allows the layers to settle and makes cleaner slices.

19. Serve

Cut into squares or thick slices.

Use a flat spatula/cake server to carefully lift each portion onto a plate.

The finished slice should show beautiful layers of golden sweet potato, orange squash, carrots, creamy feta, cranberries, and walnuts.

 Q&A

Q: Can I prepare this ahead of time?
Yes. Assemble the casserole, cover, and refrigerate for up to 24 hours. Allow it to sit at room temperature briefly before baking.

Q: Can I use pecans instead of walnuts?
Absolutely. Pecans work very well with the cranberry-honey combination.

Q: Can I use goat cheese instead of feta?
Yes. Goat cheese will give the filling a softer and creamier texture.

Q: Can I make it without the cranberry glaze?
Yes, but the glaze provides the sweet-tart contrast that complements the roasted vegetables and salty feta.

Q: Why are my vegetable layers still firm?
The slices may be too thick. Cover the dish and continue baking until a knife slides easily through the center.

Q: Can I add spinach?
Yes. A layer of lightly sautéed spinach works especially well with the feta.

Q: How should I store leftovers?
Refrigerate in an airtight container for 3–4 days. Reheat covered in a 350°F (175°C) oven until warmed through.
