Ingredients — Serves 4
For the sweet potatoes
4 medium-large sweet potatoes
1½ tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp smoked paprika
Mushroom & spinach filling
225 g / 8 oz mushrooms, sliced
3 cups fresh baby spinach
2–3 garlic cloves, finely minced
1 tbsp olive oil
½ tsp dried oregano or Italian seasoning
¼ tsp smoked paprika
Salt and black pepper, to taste
1 tbsp fresh lemon juice
Toppings
1–2 ripe avocados, diced
½–¾ cup crumbled feta
¼ cup toasted walnuts or pecans, roughly chopped
2 tbsp pumpkin seeds, optional
Fresh parsley, cilantro or dill
Chili flakes, optional
Extra lemon wedges
Optional balsamic finish
1 tbsp balsamic glaze per serving
Detailed Method
1. Roast the sweet potatoes
Heat oven to 425°F / 220°C.
Wash and thoroughly dry the sweet potatoes.
Pierce each potato several times with a fork.
Rub with olive oil, salt, pepper and smoked paprika.
Place on a baking tray.
Roast for 45–60 minutes, depending on size.
They are ready when a knife slides easily into the center.
For especially large potatoes, allow closer to an hour. Roasting until completely tender gives you the soft, fluffy interior shown in the photo.

2. Toast the nuts
While the potatoes cook, place the chopped walnuts or pecans in a dry skillet over medium-low heat.

Toast for 3–5 minutes, stirring frequently, until fragrant.

Immediately transfer them to a plate so they don’t continue cooking in the hot pan.

3. Brown the mushrooms
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add sliced mushrooms in a relatively even layer.
Cook for 6–8 minutes.
Stir occasionally, allowing the mushroom liquid to evaporate.
Continue until the mushrooms become golden brown.
Don’t overcrowd the pan—this is the secret to getting browned mushrooms rather than soft, watery ones.

4. Add garlic and spinach
Add garlic, oregano, smoked paprika, salt and pepper.

Cook for about 30 seconds.

Add spinach and toss for 1–2 minutes, just until wilted.

Turn off the heat and stir in lemon juice.

5. Prepare the avocado
Dice the avocado and gently toss with:

a squeeze of lemon
a pinch of salt
chopped herbs
chili flakes, if desired
Keep the avocado raw and fresh rather than cooking it.

6. Open the sweet potatoes
Let the potatoes rest for about 5 minutes.

Cut a slit lengthwise through the top of each potato. Gently press the ends inward to open the center.

Fluff the sweet potato flesh with a fork while keeping the skin intact.

7. Assemble
Layer each potato with:

Sweet potato → spinach & mushrooms → avocado → feta → toasted walnuts → herbs → lemon

For an extra restaurant-style finish, add a thin drizzle of balsamic glaze.

The avocado and feta are best added at the end so the avocado stays fresh and creamy.

Nut Information & Allergy Notes
Contains nuts: if you use walnuts or pecans.

Walnuts: rich, earthy and slightly bitter; excellent with sweet potato and feta.
Pecans: sweeter and more buttery.
Pumpkin seeds: a good nut-free crunchy alternative.
Sunflower seeds: another inexpensive nut-free option.
Simply omit nuts/seeds if desired—the recipe remains delicious.
Important: If cooking for someone with a nut allergy, don’t just omit the nuts—avoid cross-contact from cutting boards, pans, utensils and packaged ingredients.

Other allergens:

Feta = milk/dairy
Sweet potatoes, mushrooms, spinach and avocado are naturally nut-free.
The basic recipe is vegetarian and naturally gluten-free, provided all packaged ingredients such as seasonings and balsamic glaze are verified gluten-free.

Pro Tips
Choose similar-sized potatoes so they finish at roughly the same time.
Don’t microwave if you want the deeply roasted flavor and caramelized skin.
Cook mushrooms until their moisture has evaporated before adding spinach.
Add avocado right before serving.
Toast nuts separately for maximum crunch.
A little lemon balances the sweetness of the potato and richness of avocado/feta.
For more protein, add chickpeas, lentils, white beans or grilled chicken.
For vegan, replace feta with a plant-based feta or creamy white-bean topping.

Q&A
Can I make this ahead of time?
Yes. Roast the sweet potatoes and prepare the mushroom-spinach mixture ahead. Refrigerate separately and reheat before assembling. Add avocado, feta and nuts immediately before serving.

Can I use sweet potato halves instead?
Absolutely. Cut the potatoes in half lengthwise before roasting and make them into sweet-potato boats. This gives more surface area for the toppings.

Can I use other mushrooms?
Yes. Cremini, button, portobello, shiitake or a mixed mushroom combination all work.

Can I make it without feta?
Yes. Try goat cheese, ricotta, dairy-free feta, hummus or a spoonful of tahini instead.

What can replace walnuts?
Use pecans, almonds, pistachios, pumpkin seeds or sunflower seeds. For a nut-free version, choose pumpkin or sunflower seeds.

Can I make it vegan?
Yes. Use a vegan feta alternative or omit the feta and add hummus/tahini.

How do I make it higher in protein?
Add chickpeas, black beans, lentils, tofu, tempeh or grilled chicken.

Why are my mushrooms watery?
The pan was probably overcrowded or the heat was too low. Cook them in a wide skillet over medium-high heat and let their moisture evaporate before seasoning.

Can I freeze it?
The baked sweet potato and mushroom-spinach filling can be frozen, but don’t freeze the fresh avocado. Add fresh avocado after reheating. Some versions recommend refrigerating assembled leftovers for several days, but the avocado is best replaced fresh.

It can be a nutrient-dense vegetarian meal: sweet potato provides carbohydrates and fiber, spinach contributes leafy greens, avocado provides unsaturated fat, mushrooms add savory flavor, and nuts/seeds provide additional fats and minerals. Exact nutrition depends heavily on potato size, oil, feta and nut quantities.
