Ingredients
Chicken Burgers
- 1½ lb (680 g) ground chicken, preferably 90–93% lean
- ¾ cup crumbled feta cheese
- ¼ cup finely diced red onion
- ¼ cup fresh parsley, finely chopped
- 2 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- 1 large egg
- ½ cup panko breadcrumbs
- 1 tbsp extra-virgin olive oil
- 1 tsp dried oregano
- 1 tsp paprika
- ½ tsp ground cumin
- ¾ tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice
- 1 tsp lemon zest
For Cooking
- 1–2 tbsp olive oil
- 6 burger buns, preferably whole-grain or brioche
- Lettuce, cucumber, tomato, and red onion, optional
Quick Tzatziki
- ¾ cup plain Greek yogurt
- ½ cup grated cucumber, squeezed dry
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 small garlic clove, minced
- ¼ tsp salt
- 1 tsp olive oil
Instructions
1. Make the tzatziki
Mix Greek yogurt, cucumber, lemon juice, dill, garlic, salt, and olive oil. Refrigerate while preparing the burgers.
2. Prepare the chicken mixture
In a large bowl, combine ground chicken, feta, red onion, parsley, dill, and garlic.
Add the egg, panko, olive oil, oregano, paprika, cumin, salt, pepper, lemon juice, and lemon zest.
Mix just until everything is combined. Don’t overmix or the burgers can become dense.
3. Form the patties
Divide the mixture into 6 equal portions and shape into patties about ¾-inch thick.
Because ground chicken is soft and sticky, lightly wet or oil your hands while shaping.
Place the patties on a plate and refrigerate for 20–30 minutes. This helps them hold their shape during cooking.
4. Cook
Heat 1–2 tablespoons olive oil in a large skillet over medium heat.
Add the patties and cook for approximately 5–6 minutes per side, depending on thickness.
The safest way to check doneness is with a thermometer: the center should reach 165°F (74°C).
5. Rest
Transfer the cooked burgers to a plate and let them rest for 3–5 minutes.
6. Assemble
Toast the buns and spread with tzatziki. Add lettuce, cucumber, tomato, and red onion, then place the Greek chicken burger on top.
Finish with a squeeze of fresh lemon and a little extra feta or dill.
Oven/Air Fryer Options
Oven: Bake patties at 400°F (200°C) for about 18–22 minutes, flipping halfway, until they reach 165°F internally.
Air fryer: Cook at 375°F (190°C) for approximately 10–14 minutes, flipping halfway. Check the center for 165°F.

Best texture tip
