Beef chuck/stew meat, cut into 1½-inch cubes 1½ lb (680 g)
Beef broth 4 cups (960 ml)
Mixed frozen vegetables (peas, corn, carrots) 2 cups (300 g)
Green beans, cut into pieces 2 cups (250 g)
Baby potatoes, halved 1½ lb (680 g)
Carrots, sliced 2 medium (about 200 g)
Salt 1 tsp, or to taste
Black pepper ½ tsp
Italian seasoning or dried mixed herbs 1 tsp
Garlic, minced 2 cloves
Onion, diced 1 medium
Worcestershire sauce 1 tbsp (optional, but adds flavor)
Olive oil 1 tbsp (for browning the beef, optional)

 Instructions

  1. Prepare the beef: Pat the beef dry and season with about ½ tsp salt and the black pepper.
  2. Brown for extra flavor: Heat olive oil in a skillet over medium-high heat. Brown the beef in batches for 2–3 minutes per side. This step is optional but gives the stew a richer flavor.
  3. Layer the slow cooker: Add potatoes, carrots and onion to the bottom. Add the browned beef on top.
  4. Add vegetables: Add the frozen mixed vegetables and green beans.
  5. Season: Sprinkle in the remaining salt, Italian seasoning and minced garlic. Add Worcestershire sauce if using.
  6. Add broth: Pour in the beef broth. The ingredients don’t need to be completely submerged.
  7. Cook:
  8. LOW: 7–8 hours
  9. HIGH: 4–5 hours

Cook until the beef is very tender and the potatoes are easily pierced with a fork.

  1. Adjust: Taste before serving and add additional salt and pepper if necessary.
  2. Serve: Ladle into bowls while hot. The stew can be served as-is, or with crusty bread.

Optional thicker gravy

For a thicker, more traditional stew, mix 2 tbsp cornstarch + 3 tbsp cold water. Stir it into the hot stew during the final 15–20 minutes on HIGH, until thickened.
