Ingredients

  • 2 lb (900 g) beef chuck roast or sirloin, cut into 1½-inch / 4-cm chunks

  • 4 tbsp (56 g) unsalted butter

  • 5–6 cloves garlic, finely minced

  • 1 small onion, finely diced

  • 1 cup (240 ml) beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp smoked paprika

  • 1 tsp Italian seasoning

  • 1 tsp salt, or to taste

  • ½ tsp black pepper

  • ½ tsp onion powder

  • 1 tbsp olive oil, for searing

  • 1 tbsp chopped fresh parsley, for garnish

Optional for extra-rich gravy

  • 1 tbsp cornstarch

  • 2 tbsp cold water


 Detailed Method

1. Prepare the beef

Pat the beef pieces dry with paper towels. Cut them into fairly uniform chunks so they cook evenly.

Season with:

  • salt

  • black pepper

  • smoked paprika

  • Italian seasoning

  • onion powder

Toss well to coat.

2. Sear the steak

Heat the olive oil in a large skillet over medium-high heat.

Working in batches, sear the beef for about 1–2 minutes per side, just until nicely browned.

Don’t cook it through at this stage. The slow cooker will finish the cooking.

Transfer the browned beef to the slow cooker.

3. Build the garlic-butter sauce

Reduce the skillet to medium heat.

Add the butter and diced onion. Cook for 2–3 minutes, until the onion starts softening.

Add the minced garlic and cook for about 30 seconds, stirring constantly.

Pour in the beef broth and Worcestershire sauce. Scrape the browned bits from the bottom of the skillet—they add lots of flavor.

4. Slow cook

Pour the garlic-butter mixture over the beef.

Cover and cook:

  • LOW: 4–6 hours

  • HIGH: 2–3 hours

For very tender chuck steak, LOW is preferable.

The beef should be fork-tender rather than merely cooked through.

5. Thicken the sauce — optional

If you want a thicker gravy, remove about ½ cup of the liquid and place it in a small saucepan.

Mix 1 tbsp cornstarch + 2 tbsp cold water until smooth. Stir it into the hot liquid and simmer for 1–2 minutes until thickened.

Pour the gravy back over the steak bites.

6. Finish

Taste and adjust salt and pepper.

Sprinkle generously with fresh parsley.

Serve immediately with the buttery garlic sauce spooned over the beef.

  • Crusty bread

Best combination: creamy mashed potatoes + steak bites + plenty of the garlic-butter gravy.
